Chris's Famous Tomato Sandwich

An updated version of a summertime favorite.

Ingredients
  • 1 loaf good quality rustic country white bread
  • 1 tbs real mayonaise
  • about 5 drops Tobasco
  • 1 extra large heirloom tomato
  • sea salt to taste
  • freshly ground pepper to taste
  • 1/2 teaspoon finely minced fresh dill or 1/4 tsp dried
  • 1 tbs finely grated Parmesan cheese
Method
  1. Slice an inch thick piece from the middle of the country loaf. Spread a thin layer of mayonnaise on the slice, add about 5 drops of Tobacco sauce to the mayonnaise, and spread evenly.

  2. Slice an inch thick plank of tomato and place on bread. It's best if the tomato slice is roughly the size of the bread slice. Season with sea salt and freshly ground pepper. Sprinkle with fresh dill and Parmesan cheese. Serve immediately.
