Chris's Famous Tomato Sandwich

The Perfect Summer Tomato

That’s no pumpkin in the photo above, it’s an heirloom tomato!  You’ll need an extra large, sun-ripened tomato to make this amazing sandwich.

Chris's Famous Tomato Sandwich

My brother, Chris, developed this recipe. For years he’s been growing enormous old-fashioned tomato varieties in his home garden. This sandwich is one of the ways he uses his delicious harvest.

Look for heirloom tomatoes, like Brandywine, at your local farmers market or farm stand. Or maybe you’re a gifted gardener with an abundant harvest of your own. Either way, choose the largest tomato you can find.

Messing With Tradition ~ Just a Little

Chris's Famous Tomato Sandwich

Chris is a fearless innovator in the kitchen, so it’s not surprising that he’s experimented with traditional tomato sandwich recipes by adding dill, Parmesan cheese, and Tobasco sauce. It’s a winning combination, and has become an instant classic among friends and family.

An updated version of a summertime favorite.

Servings: 1
Author: Chris Eischen
Ingredients
  • 1 loaf good quality rustic country white bread
  • 1 tbs real mayonaise
  • about 5 drops Tobasco
  • 1 extra large heirloom tomato
  • sea salt to taste
  • freshly ground pepper to taste
  • 1/2 teaspoon finely minced fresh dill or 1/4 tsp dried
  • 1 tbs finely grated Parmesan cheese
Method
  1. Slice an inch thick piece from the middle of the country loaf. Spread a thin layer of mayonnaise on the slice, add about 5 drops of Tobacco sauce to the mayonnaise, and spread evenly.

  2. Slice an inch thick plank of tomato and place on bread. It's best if the tomato slice is roughly the size of the bread slice. Season with sea salt and freshly ground pepper. Sprinkle with fresh dill and Parmesan cheese. Serve immediately.
